Now one of my dads favorite wines was Dandelion wine, well i decided i was going to give this a shot as i have never made it before. My dad is Dead now so i won't have a good taste tester other than myself or maybe my mom so we will have to see how it goes, BUT man it is alot of work to do this i should add man it took me 2 hours just to pick and prepare 2 quarts of flower tops. Here they are in the pail steeping in boiling water, it will steep for 2 days then i have to boil and add the sugars that it needs. It doesn't look pretty lolol but it smells nice.

Dandelion Wine is not an easy one to make it took me 2 hours to pick and trim the flowers needed to make the 2 quarts, you would think that it would be easy and fast for as many of the Dandelions i have in my yard but it's not. Dandelion wine was my dads favorite wine when he was still here and thought i would give it a try and see what is so great about it, here is a pick of the flowers steeping in the hot water, it has to steep for 2 days this way.  Today i boiled it up and put the sugars in it, then let it cool and added the yeast nutrient and the yeast and put it under air lock for the cooking it is some strange looking stuff but when i tasted it it tasted like tea and i should add that it tasted better than some teas i have drank.

Raked and bottled 28 more liters last night. These are the kinds. white grape/apple---2 gallons of this. Pineapple/orange strawberry/orange/banana raspberry/white grape/apple blueberry/pomegranate/apple strawberry/apple

Those combinations sound pretty good. I've had strawberry/banana without the orange and also the dandelion wine that you mentioned earlier. Years ago a friend of mine in Michigan made both and they were good. I know it takes a lot of time and work. Hope you have enjoyed the experience.

Looks good. What did you use to stabilize the wines? In my experience...that much headspace in the bottle leaves too much air surface area to interact with the wine. It may oxidize pretty quickly...which darkens it and definitely affects the taste. Sort of like leaving a cut apple out in the air. I'd drink it pretty fast, rather than letting it 'age'..

Cheese i use (POTASSIUM SORBATE) Stabilizer 1/2 tsp per gallon and haven't had any renewed fermentation since i started knock on wood. as far as the head space things seem to work out pretty good i haven't had any oxidize or darken on me yet knock on wood again, i don't drink it that fast but everyone else drinks it as fast as i can make it. I believe after this last racking i have 10 cases made now, i have 25 gallons that i am waiting for to finish up to be racked for the first time.

Hey i forgot to and im not sure if it matters with this but i do store mine in boxes and in a dark closet, not sure if that is why i don't get the oxidization that you are talking or not.
